Sambar Rice


Ingredients

Rice – 1 cup
Toor Dal – ½ cup
Tamarind- lemon sided
White pumpkin,carrots,peas,drumsticks,potatos
Onion-1/2
Grated coconut-1/2 cup
Channadal-1tsp
Coriander seed-2 tsp
Methi seeds- 1 tsp
Asafeotida-1/2 tsp
Redchilli-2
Sambar pdr-1 tsp
Turmeric pdr-1/2 tsp
Ghee- 4 tsp
Cashew nuts – a hand ful
Curry leaves-5
Musturd seeds-1 tsp
Coriander leaves
Salt to taste

Method

  1. Wash the rice and dal and cook it together in pressure cooker.
  2. Put the tamarind in 1 cup water and make tamarid juice.
  3. Cut all the vegetables into cubes and cook it in the tamarind juice adding salt,turmeric pdr,sambar pdr and asafeotida.Fry Onions in 1 tsp ghee and add that also to the cooking vegetables. Half close the vessel with a lid and let it cook.
  4. In another pan add oil and fry channadal, coriander seeds, methiseeds, red chilli and 2 curry leaves till golden brown.Grind it in mixie with the grated coconut adding little water. Pour this mixture to the cooked vegetables.
  5. Add the cooked rice and dal to it. Add salt to taste. Cook it in low flame till it all come together.Add little water if necessary.It should be in semi liquid form.
  6. Splutter musterd seeds and curry leaves in ghee and fry the cashewnuts also in it adding rest of the ghee. Add it to the Sambar rice.
  7. Garnish it with coriander leaves.
